Spicy Chicken Soup (Sup Ayam Rawit)
Ingredients:
- 250 grams chicken, cut into pieces
- 800 ml water
- 3 handfuls of green bird’s eye chilies (cabe rawit hijau)
- 5 red bird’s eye chilies (cabe rawit merah)
- 1 tomato, cut into pieces
- Salt and chicken broth powder, to taste
- 1 piece of ginger, smashed
Spice Paste:
- 5 cloves garlic
- 2 shallots
- 1/2 teaspoon ground black pepper
Instructions:

Boil the chicken in water until it boils. Discard the first broth.

Boil the chicken again with smashed ginger until boiling.

Sauté the spice paste until fragrant. Add some smashed green and red bird’s eye chilies. Sauté until the chilies are slightly wilted.

Add the sautéed spice paste and bird’s eye chilies into the boiling chicken broth. Season with salt and chicken broth powder.

Add the remaining green and red bird’s eye chilies. Cook until boiling. Adjust the seasoning. Finally, add the red tomatoes.

Serve hot.
