Spicy Black Pepper Chicken Stir-Fry

Ayam Lada Hitam (Black Pepper Chicken)

Ingredients:

  • 500 grams chicken breast, cut into cubes
  • 1 medium red bell pepper, sliced
  • 1 medium green bell pepper, sliced
  • 1 tablespoon finely ground black pepper
  • 1 tablespoon oyster sauce
  • 1 teaspoon fish sauce
  • 2 tablespoons sweet soy sauce
  • 1 medium onion, diced
  • 10 small Thai bird chilies, whole
  • 1/2 tablespoon cornstarch
  • Sugar and salt, to taste
  • 2 tablespoons cooking oil
  • 1/2 cup water (150 cc)

For the Spice Paste:

  • 8 shallots
  • 4 cloves garlic
  • 1 cm ginger

Instructions:

  1. Prepare the Spice Paste: Blend shallots, garlic, and ginger into a smooth paste.

  2. Cook the Chicken: Heat 2 tablespoons of cooking oil in a large pan over medium heat. Add the spice paste and sauté until fragrant.

  3. Add Onions and Chicken: Stir in the diced onion and chicken cubes. Cook until the chicken is browned and cooked through.

  4. Season: Pour in the oyster sauce, sweet soy sauce, and fish sauce. Season with sugar and salt to taste. Mix well to coat the chicken evenly.

  5. Add Chilies and Peppers: Stir in the whole Thai bird chilies and bell peppers. Cook for a few minutes until the peppers are tender.

  6. Thicken the Sauce: In a small bowl, dissolve the cornstarch in the 1/2 cup water. Pour this mixture into the pan, stirring continuously until the sauce thickens.

  7. Finish and Serve: Once the sauce has thickened and the peppers are cooked, remove from heat. Garnish with fried shallots and serve hot with steamed rice.
