Ayam Lada Hitam (Black Pepper Chicken)

Ingredients:

  • 3 chicken breasts
  • 2 cloves garlic
  • 2 shallots
  • 1 onion
  • Handful of green beans (traditionally uses red and green bell peppers, but green beans can be substituted)
  • 1 tablespoon oyster sauce
  • 1 sachet black pepper sauce (such as Saori brand)
  • Ground black pepper, to taste
  • Chili peppers, to taste

Steps:

  1. Prepare the Chicken: Begin by boiling the chicken breasts in water until fully cooked. Once cooked, remove from the pot and allow to cool. When the chicken is cool enough to handle, shred it into bite-sized pieces.

  2. Sauté the Aromatics: In a large skillet or wok, heat a small amount of oil over medium heat. Add the garlic, shallots, onion, and chili peppers. Sauté until the onions become translucent and the mixture is fragrant.

  3. Cook the Chicken: Add the shredded chicken to the skillet, stirring to combine with the sautéed aromatics. Pour in some of the chicken broth left from boiling the chicken to keep the mixture moist.

  4. Add the Sauces and Seasoning: Incorporate the black pepper sauce and oyster sauce into the skillet. Season with ground black pepper to taste. Stir well to ensure the chicken is evenly coated with the sauces.

  5. Simmer: Allow the mixture to simmer, stirring occasionally, until the liquid reduces and the chicken absorbs the flavors, about 10-15 minutes.

  6. Add the Vegetables: Add the green beans (or bell peppers, if using) to the skillet. Continue to cook until the vegetables are tender but still crisp.

  7. Serve: Once the sauce has thickened and the vegetables are cooked to your liking, remove the skillet from the heat. Serve the Ayam Lada Hitam hot, accompanied by steamed rice or your preferred side dish.
