Instructions:
-
Prepare the Eggs:
Heat a generous amount of cooking oil in a frying pan over medium heat. Crack the eggs into the pan and fry until the whites are fully set and the yolks are cooked to your preference. Once done, carefully remove the eggs from the pan and set them aside. -
Prepare the Spicy Black Pepper Sauce:
In the same pan, add a bit more oil if needed and heat it over medium heat. Add the sliced onion and cook until it becomes fragrant and translucent. Add the sliced green and red chilies to the pan and continue to sauté for a few more minutes until the chilies are slightly softened. -
Create the Sauce:
Pour a small amount of water into the pan to deglaze, scraping up any browned bits from the bottom. Stir in the black pepper sauce, ground black pepper, and sugar. Cook the mixture until it thickens slightly and the flavors meld together, adjusting seasoning as needed. -
Assemble the Dish:
Sprinkle the chopped green onion over the sauce and give it a quick stir. Carefully pour the hot sauce over the fried eggs placed on serving plates. -
Serve and Enjoy:
Serve immediately while the sauce is warm and the eggs are still crispy. Enjoy this delicious and spicy dish!
Tip: Adjust the amount of black pepper sauce and sugar according to your taste preference.
