Oseng Tetelan Sapi (Braised Beef Ribs Stir-Fry)

Ingredients:

  • 1/4 kg beef ribs (tetelan sapi)
  • 500 ml water
  • 2 bay leaves (daun salam)
  • Salt, to taste
  • Sugar, to taste
  • Cooking oil, for sautéing
  • For the Spice Paste:
    • 100 g curly red chilies (cabe merah keriting)
    • 30 g red bird’s eye chilies (cabe rawit merah, adjust for heat preference)
    • 50 g shallots (bawang merah)

Instructions:

  1. Prepare the Beef Ribs:

    • In a large pot, bring 500 ml of water to a boil and add the beef ribs along with the bay leaves.
    • Simmer until the beef ribs are tender. Once cooked, remove from heat and let cool slightly.
    • Cut the beef ribs into approximately 1 cm pieces and set aside.
  2. Prepare the Spice Paste:

    • Boil or steam the curly red chilies, red bird’s eye chilies, and shallots until softened.
    • Once softened, grind the ingredients into a coarse paste using a mortar and pestle or food processor.
  3. Sauté the Spice Paste:

    • Heat a generous amount of cooking oil in a pan over medium heat.
    • Add the coarsely ground spice paste and sauté until fragrant and the oil starts to separate from the paste.
  4. Combine and Cook:

    • Season the spice paste with salt and sugar to taste, adjusting to your preference.
    • Add the pre-cooked beef ribs to the pan, stirring to coat the meat evenly with the spice mixture.
    • Pour in 100 ml of the reserved beef broth and continue cooking, allowing the flavors to meld and the liquid to reduce slightly.
  5. Final Touches:

    • Taste and adjust the seasoning if necessary.
    • Once the liquid has mostly evaporated and the beef is well coated with the spices, remove from heat.
  6. Serving:

    • Serve the Oseng Tetelan Sapi hot with a side of warm steamed rice.
