Oseng Tetelan Sapi (Braised Beef Ribs Stir-Fry)
Ingredients:
- 1/4 kg beef ribs (tetelan sapi)
- 500 ml water
- 2 bay leaves (daun salam)
- Salt, to taste
- Sugar, to taste
- Cooking oil, for sautéing
- For the Spice Paste:
- 100 g curly red chilies (cabe merah keriting)
- 30 g red bird’s eye chilies (cabe rawit merah, adjust for heat preference)
- 50 g shallots (bawang merah)
Instructions:

Prepare the Beef Ribs:
- In a large pot, bring 500 ml of water to a boil and add the beef ribs along with the bay leaves.
- Simmer until the beef ribs are tender. Once cooked, remove from heat and let cool slightly.
- Cut the beef ribs into approximately 1 cm pieces and set aside.

Prepare the Spice Paste:
- Boil or steam the curly red chilies, red bird’s eye chilies, and shallots until softened.
- Once softened, grind the ingredients into a coarse paste using a mortar and pestle or food processor.

Sauté the Spice Paste:
- Heat a generous amount of cooking oil in a pan over medium heat.
- Add the coarsely ground spice paste and sauté until fragrant and the oil starts to separate from the paste.

Combine and Cook:
- Season the spice paste with salt and sugar to taste, adjusting to your preference.
- Add the pre-cooked beef ribs to the pan, stirring to coat the meat evenly with the spice mixture.
- Pour in 100 ml of the reserved beef broth and continue cooking, allowing the flavors to meld and the liquid to reduce slightly.

- Taste and adjust the seasoning if necessary.
- Once the liquid has mostly evaporated and the beef is well coated with the spices, remove from heat.

- Serve the Oseng Tetelan Sapi hot with a side of warm steamed rice.
