Ingredients:

Red Bell Pepper (Capsicum) 1, thinly sliced
Onion 1, chopped
Dry Red Chilli 4
Methi Seeds (Fenugreek Seeds) 1 teaspoon
Coriander Seeds (Dhania Seeds) 1 tablespoon
Cumin Seeds (Jeera) 1 teaspoon
Whole Black Peppercorns 1 tablespoon
Tamarind Lemon-size piece
Fresh Coconut (grated) 2 cups
Garlic 3 cloves
Turmeric Powder (Haldi) 1 teaspoon
Salt To taste

Instructions:

  1. Prepare the Curry Paste:

    • Start by roasting the dry red chillies, fenugreek seeds, coriander seeds, cumin seeds, and black peppercorns in a small pan over medium heat. Toast these spices until they release a fragrant aroma.
    • Once roasted, transfer them into a blender. Add the grated coconut, tamarind, and turmeric powder to the blender.
    • Blend everything into a smooth curry paste, adding a little water as needed to achieve a paste-like consistency. Set this curry paste aside for later use.
  2. Cook the Vegetables:

    • Heat 1 teaspoon of oil in a large pan over medium heat. Add the chopped onions, and sautรฉ them until they soften and turn translucent.
    • Add the broccoli florets and sliced red bell pepper. Sautรฉ the vegetables for a few minutes, allowing the onions to caramelize and the broccoli to soften slightly.
  3. Combine the Curry Paste and Simmer:

    • Add the freshly prepared curry paste to the sautรฉed vegetables, stirring it well to coat them evenly.
    • Continue sautรฉing the mixture for a couple more minutes to allow the flavors to meld together.
    • Season the curry with salt, to taste, and then pour in 1.5 to 2 cups of water, depending on how thick or thin you prefer your curry. Stir well to combine all the ingredients.
    • Let the curry simmer for about 10-15 minutes, ensuring the broccoli is tender and the flavors have developed.
  4. Adjust and Serve:

    • Check the seasoning and adjust salt as necessary. Once the curry has reached your desired consistency and the flavors have melded, it is ready to serve.
