Instructions

Dry Roasting the Broken Wheat:

- Once done, turn off the heat and set the roasted dalia aside for later use.
-
Cooking the Vegetables and Spices:
- In a pressure cooker, heat 1 teaspoon oil on medium flame.
- Add 1 bay leaf and 1/2 teaspoon cumin seeds to the oil. Let them sizzle for a few seconds.
- Add the finely chopped onions and sauté them until they turn translucent, about 2-3 minutes.
- Stir in 1 teaspoon ginger garlic paste, 2 finely chopped green chilies, 1 chopped carrot, 5 chopped green beans, and 2 chopped tomatoes. Sauté for about 2 minutes.
- Continue sautéing the mixture for another 3-4 minutes until the vegetables soften slightly.
-
Adding Spices:
- Now, add the salt, 1/2 teaspoon turmeric powder, 1/2 teaspoon garam masala powder, and 1 teaspoon red chilli powder to the cooked vegetables. Stir well to combine and coat the vegetables with the spices.
-
Combining the Roasted Dalia:
- Add the dry-roasted broken wheat (dalia) into the cooker and mix it thoroughly with the sautéed vegetables and spices.
- Pour in 2 cups of water and stir everything together.
- Close the lid of the pressure cooker and cook on medium heat for 4 whistles.
- Once done, turn off the heat and allow the pressure to release naturally.
-
Serving:
- Once the pressure has released, open the cooker and fluff the Spicy Dalia Pulao with a fork.
- Garnish with finely chopped coriander leaves.
- Serve hot with a side of Burani Raita and end the meal with a delicious Double Ka Meetha for a delightful North Indian feast.
