Description:

This is probably the best Red Beans and Rice you will ever have. Every time I make it, my family just devours it. It’s really great with hot sauce and cornbread.

Ingredients:

  • 1 pound ground beef
  • 1 smoked kielbasa, sliced
  • 1 can (15 ounces) dark red kidney beans
  • 1 onion, diced
  • 2/3 cup chopped celery
  • 4 cloves garlic, minced
  • 1 can (14.5 ounces) chicken broth
  • 1 teaspoon cayenne pepper
  • 1/4 cup all-purpose flour
  • 3 cups water
  • 1/2 cup rice
  • Cajun seasoning, to taste

Instructions:

  1. Brown hamburger and onions: In a large pot, brown the ground beef with the diced onion until the meat is no longer pink and the onions are translucent.
  2. Add chicken broth: Pour in the chicken broth and bring it to a gentle simmer.
  3. Combine ingredients: Stir in the sliced kielbasa, dark red kidney beans, chopped celery, minced garlic, Cajun seasoning (to taste), and cayenne pepper.
  4. Simmer: Bring the mixture to a boil, then reduce the heat to low and let it simmer for 60 minutes, allowing the flavors to meld together.
  5. Cook rice: While the beans are simmering, cook one cup of rice according to package instructions.
  6. Incorporate rice: Once the rice is cooked, add it to the pot with the beans and stir to combine.
  7. Thicken sauce: In a small bowl, mix the flour with cold water to create a slurry. Pour the slurry into the pot, stirring continuously, to thicken the sauce.
  8. Serve and enjoy: Ladle the Red Beans and Rice into bowls and serve hot, garnished with your favorite hot sauce if desired. Enjoy with a side of cornbread for a delicious and satisfying meal!
