Codfish Cakes with a Spicy Twist 🌶️

Overview:

Codfish Cakes are a classic Canadian comfort food, perfect for cozying up on cold winter nights. This recipe, passed down through generations, was a favorite of my grandfather’s, and now it can be a staple in your kitchen too! We’ve added a spicy kick with hot pepper sauce, elevating this traditional dish to new heights of flavor.

Ingredients:

  • 1 pound salt cod fish
  • 1/2 cup milk
  • 1/2 cup mashed potatoes
  • 2 tablespoons butter
  • 2 teaspoons pepper
  • 1/2 cup fresh parsley, chopped
  • 1 tablespoon hot pepper sauce
  • 1 cup breadcrumbs
  • 1/4 cup olive oil (for frying)

Instructions:

1 Soak the salt cod fish in cold water for at least 6 hours or overnight. PT6H+
2 Change the water at least 3 times during the soaking process to remove excess salt.
3 After soaking, remove the fish from the water and rinse well under cold running water.
4 Place the rinsed fish in a saucepan filled with fresh cold water and set it over medium-high heat.
5 Bring the water to a simmer and cook the fish for 10 minutes until it’s tender. PT10M
6 Drain the cooked fish and let it stand until cool enough to handle.
7 In a small bowl, combine the breadcrumbs and milk, allowing them to soak together.
8 Using a fork, flake the cooked fish into a large bowl, ensuring to remove any bones.
9 Add the soaked breadcrumb mixture, mashed potatoes, butter, pepper, chopped parsley, and hot pepper sauce to the bowl with the flaked fish.
10 Mix all the ingredients together until well combined, forming a cohesive mixture.
11 Shape the mixture into 2 1/2-inch cakes, pressing firmly to ensure they hold together.
12 Heat half of the olive oil in a large skillet over medium-high heat until hot.
13 Carefully place the codfish cakes in the skillet, cooking until they are golden brown on both sides, about 2 minutes per side. PT4M

Serving:

Once golden and crispy, transfer the codfish cakes to a serving platter. Garnish with additional chopped parsley for a pop of color and freshness. Serve hot with a side of tangy tartar sauce or a dollop of zesty aioli for dipping. These savory cakes are perfect as an appetizer, a hearty brunch item, or a satisfying main course alongside a crisp green salad or some steamed vegetables.
