Makes approximately 16 servings.

Instructions:

  1. Prepare Lentils: Rinse the red and brown lentils in cold water.

  2. Cook Lentils: In a medium-sized saucepan, add the lentils and 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer for 10 minutes.

  3. Prepare Soup Base: In a medium-sized cooking pot, combine the cooked lentils (including the liquid), black beans (including liquid), vegetable broth, chicken broth, chicken bouillon cubes, cubed potatoes, and celery root. Bring to a boil, then reduce heat, cover, and simmer for about 10 minutes.

  4. Saute Onion Mixture: Meanwhile, in a medium-sized frying pan, melt the butter and olive oil together. Add the chopped garlic and onions, and sauté until the onions are translucent, about 5 minutes.

  5. Combine Ingredients: Add the sautéed onion mixture to the soup pot. Stir in the soy sauce, black pepper, chili powder, ground cumin, dried oregano, and 4 cups of water. Bring the mixture to a boil.

  6. Adjust Consistency: If the soup is too thick, add more water as needed. Reduce heat, cover, and simmer for about 10 minutes.

  7. Blend Soup: Remove about one-third of the soup and transfer it to a bowl. Using an electric blender, blend until smooth, then return it to the soup pot.

  8. Final Touches: Add the Sambal Oelek and instant mashed potatoes to the soup. Stir well to blend.

  9. Final Cooking: Bring the soup just to a boil, then adjust seasonings to taste.

  10. Serve: Serve the Cuban Black Bean Soup hot and enjoy the bold flavors of the Caribbean!

Additional Notes:

  • Alternative Beans: You can use dried black beans instead of canned. Simply soak 2 cups of dried beans overnight in water. The next day, drain and rinse before using.

  • Lentil Substitution: Canned lentils can also be used instead of dried. You’ll need 1 (19 fluid ounce) can, including the liquid.

This Cuban Black Bean Soup – Uncle Bill’s Version recipe is a delightful blend of spices and wholesome ingredients, perfect for any occasion. Whether you’re cooking for a crowd or simply craving a taste of the Caribbean, this soup is sure to satisfy your appetite! 🍲🌴
