Cauliflower Matar Bhurji (Cauliflower and Green Peas Stir-Fry)

Description:
Cauliflower Matar Bhurji is a flavorful Indian stir-fry made with grated cauliflower and green peas. This dish uses everyday spices and can be served as a side with any meal. It is perfect for lunch boxes, making it a great option for both adults and children. You can also stuff it inside roti or paratha to make delicious rolls. It pairs wonderfully with dal fry and tawa paratha for a wholesome dinner experience.


Ingredients:

Cauliflower (grated) 1 medium cauliflower
Green peas (fresh/frozen) 1 cup
Onion (finely chopped) 1 medium onion
Green chilies (slit) 3 green chilies
Tomato (finely chopped) 1 medium tomato
Ginger-garlic paste 1 tsp
Turmeric powder 1/4 tsp
Garam masala powder 1/2 tsp
Cooking oil 1 1/2 tbsp
Red chili powder 1 tsp
Salt As per taste
Fresh coriander leaves A handful (for garnish)

Instructions:

  1. Prepare the Cauliflower:

    • Bring a pot of water to a boil. Add the cauliflower florets to the water and boil for 10 minutes. Once done, drain the water and set the cauliflower aside.
    • After draining, finely chop the cauliflower or pulse it in a food processor until finely grated. Set aside.
  2. Cook the Cauliflower:

    • In a pan, heat 1 tablespoon of oil over medium heat. Add the grated cauliflower and sauté for about 5 minutes, allowing it to cook slightly. Once done, set the cauliflower aside.
  3. Prepare the Masala:

    • In another pan, heat the remaining 1/2 tablespoon of oil over medium heat. Add the finely chopped onions and sauté them until they turn soft and golden.
    • Add the ginger-garlic paste and sauté for about 1 minute, allowing the raw smell to dissipate.
    • Now, add the chopped tomatoes and cook until they become soft and the oil begins to separate from the masala.
  4. Add Spices and Peas:

    • Add the green peas, turmeric powder, red chili powder, and salt to the masala. Mix well and cook for about 5 minutes, allowing the peas to cook through and the flavors to blend.
    • Cover the pan with a lid and let it cook for a few more minutes to ensure the peas are tender.
  5. Combine the Cauliflower:

    • Add the sautéed cauliflower to the masala mixture. Stir well to combine the cauliflower with the peas and spices.
    • Add garam masala powder for an extra boost of flavor and cook for another 3-4 minutes, allowing everything to heat through and the flavors to blend.
  6. Garnish and Serve:

    • Garnish with freshly chopped coriander leaves and serve hot.
    • Cauliflower Matar Bhurji can be enjoyed with dal fry and tawa paratha for a wholesome dinner. You can also serve it with chapati or rice for a complete meal.

Tips:

  • For a spicier version, you can increase the number of green chilies or add a pinch of chili flakes.
  • To make it more hearty, you can also add finely chopped potatoes along with the peas.
  • This dish can be made in advance and stored in the refrigerator for a couple of days, making it a convenient option for meal prepping.
