Instructions

  1. Prepare the Cauliflower: Start by washing the cauliflower thoroughly and cutting it into small florets. In a pot of boiling water, add the cauliflower florets along with a pinch of salt and turmeric powder. Cook it on high heat for about 2 minutes, then drain and set aside.

  2. Heat the Oil: In a large pan or wok, heat 2 teaspoons of oil over medium heat. Once the oil is hot, add the coriander powder, red chili powder, turmeric powder, and garam masala powder. Stir the spices for about 30 seconds to allow them to bloom and become fragrant.

  3. Add the Cauliflower: Now, add the parboiled cauliflower florets to the pan. Stir well to coat the cauliflower with the spices. Cook the cauliflower for about 5 to 6 minutes until it begins to soften.

  4. Add Red Bell Pepper: Add the sliced red bell pepper to the pan and mix everything well. Continue cooking for another 5 minutes, letting the bell pepper retain its crunch while the cauliflower becomes tender.

  5. Finish with Kasuri Methi: Once the vegetables are cooked, add the crushed kasuri methi (dried fenugreek leaves) and give the dish a final stir. Remove from heat.

  6. Serve: Your Cauliflower and Red Bell Pepper Stir Fry is now ready! Serve it hot with dal fry and soft phulkas for a satisfying and nutritious meal.
