Instructions

  1. Prepare the Moong Sprouts and Aloo Filling

    • Start by preparing the filling. If you don’t have store-bought green moong sprouts, you can make sprouts at home. To do so, soak green moong beans overnight, drain the water, and let them sprout for about 2–3 days in a warm place.
    • In a mixing bowl, combine the green moong sprouts, boiled, peeled, and diced potato, finely chopped onion, deseeded chopped tomatoes, green chutney, sweet chutney, chaat masala powder, cumin powder, red chili powder, and lemon juice. Toss everything well to mix.
    • Add finely chopped coriander leaves to the mixture and toss once more. Taste and adjust the seasoning, adding more salt or spices according to your preference. The filling should be a perfect balance of spicy, tangy, and savory.
  2. Prepare the Buttered Pav Buns

    • Slice the pav buns horizontally into two halves.
    • Spread a thin layer of salted butter on the inside of each bun.
    • Heat a flat tawa or griddle over medium heat. Place the buttered side of the buns on the tawa and toast them until they are golden brown and slightly crispy on both sides. Remove them from the tawa once done.
  3. Assemble the Chatpata Aloo Moong Sprouts with Buttered Pav Buns

    • Place the buttered pav buns on a serving platter.
    • Spoon a generous amount of the chatpata aloo and moong sprouts filling onto the inside of each pav bun, much like making a sandwich.
    • Serve immediately and enjoy the tangy, spicy, and crunchy bite!
  4. Serving Suggestions

    • Serve Chatpata Aloo Moong Sprouts with Buttered Pav Buns alongside traditional Indian chaat snacks such as Gujarati Khandvi, Pani Puri, and Dahi Vada for a complete and delightful chaat party experience. These crispy, spicy bites pair wonderfully with chilled beverages like Masala Chaas (buttermilk) or Mint Lemonade for an unforgettable snack time.

Pro Tips:

  • You can adjust the spice level by increasing or reducing the amount of red chili powder and chaat masala.
  • If you’re looking for an extra crunch, add a sprinkle of sev or pomegranate seeds on top of the filling before assembling the pav buns.
  • This recipe can be customized with other vegetables such as grated carrots or cucumber for added freshness and texture.

This Chatpata Aloo Moong Sprouts Recipe with Buttered Pav Buns is sure to bring a burst of flavors to your snack time, making it an irresistible treat for all ages!
