Coriander (Dhania) Seeds 1 tablespoon
Cumin Seeds (Jeera) 1 tablespoon
Fennel Seeds (Saunf) 1/2 tablespoon
Whole Black Peppercorns 1/2 tablespoon
Dry Red Chillies 2
Oil As required
Ginger Garlic Paste 1-1/2 tablespoon
Tamarind Paste 1-1/2 tablespoon
Sugar 1/4 tablespoon
Water 3 tablespoons
Salt To taste
Coriander (Dhania) Leaves As required, chopped

Instructions:

  1. Roast the Spices:
    Heat a heavy-bottomed pan over medium heat. Add the coriander seeds, cumin seeds, fennel seeds, black peppercorns, and dry red chillies. Toast them for a few seconds until they become fragrant.

  2. Grind the Spices:
    Transfer the roasted spices to a grinder and pulse them into a coarse powder. Set aside.

  3. Cook the Potatoes:
    Heat oil in a wok or kadhai. Once hot, add a pinch of asafoetida. After a few seconds, add the ginger garlic paste and sauté it for 1-2 minutes until it becomes aromatic.

  4. Add Baby Potatoes:
    Toss the boiled and peeled baby potatoes into the wok. Cook them, stirring occasionally, until the potatoes turn golden brown and crispy.

  5. Prepare the Tamarind Mixture:
    While the potatoes are cooking, mix the tamarind paste and sugar in water. Once combined, pour this mixture into the wok with the potatoes. Add salt to taste.

  6. Mix in Roasted Spices:
    Sprinkle the ground dry masala over the potatoes and mix well. Let the potatoes cook for another 2 minutes, allowing the flavors to meld together.

  7. Final Touch:
    Garnish with chopped coriander leaves for a fresh burst of flavor. Serve hot!
