Coriander (Dhania) leaves A few sprigs
Mint leaves (Pudina) A few sprigs
Sweet chutney (Date & Tamarind) As needed
Crackers (salted, or your choice) 12 pieces

Instructions

  1. Prepare the Spicy Potato Topping:
    Start by preparing the topping for the canapes. Heat a kadai (or frying pan) with 2 teaspoons of oil over medium heat. Once the oil is hot, add cumin seeds and urad dal. Sauté until the dal turns golden brown, which should take about 2-3 minutes.

  2. Add the Aromatics and Spices:
    Once the dal is golden, add chopped curry leaves, followed by the red chili powder paste, turmeric powder, and asafoetida (hing). Stir everything together and cook for another minute, allowing the spices to blend beautifully.

  3. Combine the Potatoes and Spices:
    Now, add the boiled and grated potatoes to the spice mixture. Stir thoroughly to ensure the potatoes are well-coated with the spices.

  4. Add the Final Seasonings:
    Mix in garam masala, salt, sugar (if using), chaat masala, and a handful of chopped cilantro. Cook for another 1-2 minutes, allowing the flavors to meld together. Once everything is well-mixed, turn off the heat and let the mixture cool down a little.
