Byadagi Dried Chillies 2 pieces

Instructions

  1. Prepare the Chicken & Sweet Potatoes:
    Begin by thoroughly washing the chicken pieces. Peel and dice the sweet potatoes into medium-sized cubes.

  2. Marinate the Chicken:
    In a mixing bowl, combine the chicken pieces and diced sweet potatoes. Add yogurt, salt, turmeric powder, and red chilli powder to the bowl. Mix all the ingredients well to coat the chicken and potatoes evenly. Set this mixture aside to marinate for at least 15 minutes to allow the flavors to blend.

  3. Prepare the Ground Masala:
    In a dry skillet, add the whole black peppercorns, cloves, cinnamon stick, cumin seeds, coriander seeds, and Byadagi dried chillies. Roast them on medium flame, stirring occasionally, until they release a fragrant aroma. Once roasted, remove from heat and let the spices cool down. Grind them into a fine powder using a spice grinder or mortar and pestle. Set the ground masala aside.

  4. Cook the Curry Base:
    In the same skillet, heat 1 teaspoon of oil. Add curry leaves (if available), and once they splutter, add the thinly sliced onions. Sauté the onions on medium heat until they soften and turn golden brown. Add the grated ginger, finely chopped garlic, the freshly ground masala, and green chillies. Stir-fry the mixture for a few seconds to allow the spices to release their full flavor.

    Pour in the homemade tomato puree and stir it into the onion-spice mixture. Let it cook for a minute, allowing the oil to separate slightly from the tomatoes. Now, add the marinated chicken and sweet potatoes. Stir everything together to mix well.

    Add about 1-1/2 cups of water to the curry base, adjusting the quantity based on your preferred consistency. Stir to combine and cover the pot. Let it simmer for 45-60 minutes on low-medium heat, stirring occasionally to ensure the curry doesn’t stick to the bottom. The chicken should be tender and the sweet potatoes cooked through.

  7. Final Touches:
