Spicy Chicken Feet and Tofu Stir-Fry with Basil

Rica Ceker Tahu

Ingredients:

  • 1/4 kg chicken feet
  • 1 pack firm tofu
  • 2 bunches basil leaves

For the Spice Paste:

  • 4 cloves garlic
  • 6 shallots
  • 10 orange chilies
  • 4 red chilies
  • 2 candlenuts
  • 1 teaspoon salt
  • 1 teaspoon MSG (optional)
  • 1 packet soy sauce (Kecap Bangau)
  • 1 thumb-sized piece of ginger, crushed
  • 1 thumb-sized piece of galangal, crushed
  • 2 bay leaves
  • 2 kaffir lime leaves
  • Sugar, to taste

Instructions:

  1. Prepare the Chicken Feet:

    • Clean the chicken feet thoroughly and boil them in water until tender. Drain and set aside.
  2. Prepare the Tofu:

    • Cut the firm tofu into small cubes and fry until golden brown. Set aside.
  3. Make the Spice Paste:

    • Blend together garlic, shallots, orange chilies, red chilies, and candlenuts until smooth.
  4. Cook the Spice Paste:

    • Heat oil in a pan over medium heat. Add the spice paste along with bay leaves, kaffir lime leaves, ginger, and galangal. Sauté until fragrant.
  5. Combine Ingredients:

    • Add the boiled chicken feet and fried tofu to the pan. Stir well to combine.
  6. Simmer:

    • Add 2-3 cups of water and soy sauce to the pan. Adjust the seasoning with salt and sugar. Allow the mixture to simmer until the liquid reduces and thickens.
  7. Add Basil:

    • Once the sauce has thickened, add the basil leaves. Stir until the basil wilts.
  8. Finish and Serve:

    • Remove from heat and serve hot.
