Spicy Chicken Feet and Wings
Ingredients:
- 1/2 kg chicken feet
- 1/4 kg chicken wings
- 3 cloves garlic
- 6 shallots
- 2 candlenuts
- 2 red chilies
- 20 bird’s eye chilies
- Ginger (to taste)
- Brown sugar (to taste)
- Salt (to taste)
- Sugar (to taste)
- Soy sauce (to taste)
- Cooking oil (for sautéing)
Instructions:
-
Prepare the Chicken: Begin by boiling the chicken feet and wings until tender. You can use a pressure cooker to expedite this process, but traditional boiling works just fine. Set the cooked chicken aside.
-
Prepare the Spice Paste: While the chicken is cooking, prepare the spice paste. In a blender or food processor, combine the garlic, shallots, bird’s eye chilies, candlenuts, and red chilies. Blend until you achieve a smooth paste.
-
Sauté the Spices: Heat a small amount of cooking oil in a skillet or wok over medium heat. Add the blended spice paste and sauté until fragrant and the raw smell disappears. Add a piece of ginger for extra aroma and continue to cook for a few more minutes.
-
Combine Ingredients: Add the boiled chicken feet and wings to the skillet with the sautéed spices. Stir well to coat the chicken with the spice mixture.
-
Season: Add the brown sugar, salt, and sugar to taste. Pour in a splash of soy sauce and mix thoroughly. Adjust the seasoning according to your preference.
-
Simmer: Allow the mixture to cook over low heat, letting the flavors meld and the liquid reduce. Continue cooking until the sauce has thickened and the chicken is well-coated.
-
Serve: Once the sauce has reduced and thickened to your liking, remove from heat. Serve hot, garnished with additional fresh herbs if desired, and enjoy your flavorful and spicy chicken feet and wings!
This dish pairs wonderfully with steamed rice or as a side to a more extensive meal. Its rich and spicy flavor will surely delight your taste buds!
