Tumis Jantung Ayam with Krecek, Potatoes, and Corn
Ingredients:
- 1/4 kg chicken hearts
- 1 large ear of young corn
- 3 medium potatoes
- 1 packet of krecek (cracklings)
- 2 chilies (adjust to taste)
- 1 onion
- 3 tablespoons brown sugar
- 1/2 teaspoon salt
- 1 cup water
- 1 tablespoon cornstarch
Instructions:
-
Prepare the Chicken Hearts: Begin by thoroughly cleaning the chicken hearts. Cut them in half to ensure even cooking.
-
Blanch the Chicken Hearts: In a pot, bring water to a boil with a pinch of salt. Add the chicken hearts and blanch them until the water starts to boil again. Remove the chicken hearts from the pot and discard the water. This step helps remove impurities and gives a cleaner taste.
-
Prepare the Potatoes: Peel the potatoes and cut them into small cubes. Heat oil in a pan and fry the potato cubes until they turn golden brown and crispy. Drain them on paper towels to remove excess oil.
-
Cut the Corn: Slice the young corn into bite-sized pieces. Set aside.
-
Sauté the Aromatics: Thinly slice the onion and chilies. Heat a small amount of oil in a wok or large frying pan. Add the sliced onion and sauté until it becomes translucent and fragrant.
-
Add the Chilies and Seasonings: Incorporate the sliced chilies, brown sugar, and salt into the pan. Cook until the chilies are softened and the sugar has dissolved.
-
Combine with Chicken Hearts: Add the blanched chicken hearts to the pan. Stir and cook for about 3 minutes to allow the flavors to meld.
-
Thicken the Sauce: In a separate bowl, dissolve the cornstarch in the cup of water. Pour this mixture into the pan, stirring constantly to avoid lumps. This will help thicken the sauce and give it a nice consistency.
-
Add the Krecek: Toss in the krecek (cracklings) and continue cooking until they are heated through and slightly softened.
-
Incorporate the Potatoes and Corn: Gently fold in the fried potatoes and young corn. Cook until the corn is tender and everything is well combined.
-
Optional Creamy Touch: For a creamier texture, you can add more cornstarch solution or a splash of coconut milk to the pan. Stir well to combine and cook for an additional few minutes.
-
Serve: Once everything is cooked to your desired consistency, serve the Tumis Jantung Ayam hot as a delicious and hearty meal.
Enjoy this flavorful dish that brings together the richness of chicken hearts, the crunch of krecek, and the wholesome goodness of potatoes and corn!
