Sambal Kentang dan Ati Ayam Simpel
Ingredients:
- 2 pieces of chicken liver and gizzard, cleaned
- 1 large potato
- 15 curly red chilies
- 3 shallots
- 1 clove garlic
- Water, as needed
- 2 bay leaves
- Salt, to taste
- Flavor enhancer, to taste
- Granulated sugar, to taste
- Cooking oil, as needed
Instructions:
-
Boil the Chicken Liver and Gizzard:
- Begin by boiling the chicken liver and gizzard along with the bay leaves for about 15 minutes. Once boiled, drain and let them cool. Cut them into small pieces and set aside.
-
Prepare and Fry the Potatoes:
- Clean the potato thoroughly and cut it into small cubes. Heat a generous amount of cooking oil in a frying pan and fry the potato cubes until they are golden and cooked through. Once done, remove the potatoes from the oil and drain on paper towels to remove excess oil.
-
Blend the Spices:
- In a blender or mortar and pestle, grind the curly red chilies, shallots, and garlic until you get a smooth paste.
-
Cook the Spice Paste:
- Using the same oil used to fry the potatoes, sauté the spice paste over medium heat until the raw smell dissipates and the paste begins to thicken and the oil starts to separate from the paste. This process may take a few minutes and it’s important to stir continuously to prevent burning.
-
Combine Ingredients:
- Add the boiled and chopped chicken liver and gizzard into the pan with the spice paste. Stir well to coat the liver and gizzard evenly with the spices. Next, add the fried potato cubes and mix everything together until the potatoes are well coated with the spice mixture.
-
Season the Dish:
- Finally, season the sambal with salt, granulated sugar, and a flavor enhancer to taste. Stir well and cook for another minute or two to ensure all the flavors are well combined.
-
Serve:
- Taste and adjust the seasoning if necessary. Remove from heat and transfer to a serving dish. Enjoy your Sambal Kentang dan Ati Ayam Simpel with steamed rice or as a side dish to complement your meal.
