Instructions:

  1. Begin by combining garlic and spices for a flavorful base.
  2. In a large skillet, melt butter over medium-high heat. Add chicken, sauté until lightly browned on all sides.
  3. Introduce giblets and sauté until cooked through.
  4. Transfer chicken and giblets to a stockpot. Drain excess fat, leaving just 1 tablespoon in the skillet.
  5. Add celery, onion, carrot, leek, and the spice mixture. Blend well.
  6. Pour in a small ladle of stock, cooking over low heat until vegetables are tender.
  7. Add this mixture to the chicken in the stockpot.
  8. Stir in the remaining stock, season with salt and pepper, then cover and simmer for 30 minutes.
  9. Remove chicken, set aside. Add rice to the soup, continuing to cook for an additional 15 minutes.
  10. Once the chicken is cool enough, cut it into bite-size pieces, discarding skin and bones.
  11. Return chicken to the soup and blend in apples and yogurt. Simmer for an additional 10 minutes.
  12. Degrease the soup if necessary.
  13. Stir in lemon juice, then blend in cream.
  14. Taste and adjust seasoning according to your preference.
