Ingredients:
- 200g new potatoes
- 1 onion
- 2 leeks
- 1 hot chili pepper
- 2 garlic cloves
- 2 tsp ginger
- 1 skinless chicken breast
- 250ml chicken stock
- 2 bell peppers
- 750g cooked chicken pieces (optional)
- Salt and pepper to taste
- Coriander for garnish
- Lemon juice (optional)
Instructions:
Step | Description |

1 | Heat oil in a large pan over medium heat. Add onions, garlic, ginger, and chili. Cook for 3-4 minutes until softened. |
2 | Increase heat slightly. Add leeks and potatoes to the pan. Season with salt and pepper. Cover and cook for 5 minutes, stirring occasionally, until leeks start to soften. |
3 | Stir in chicken breast and cook until browned in patches. If using cooked chicken pieces, add them at the end. |
4 | Add bell peppers and chicken stock to the pan. Bring to a boil, then reduce heat and simmer for about 15 minutes until chicken is tender and potatoes are cooked through. |
5 | Taste and adjust seasoning as needed. |
6 | Serve hot, garnished with fresh coriander. Optionally, add a squeeze of lemon juice for extra zing. |
