Ingredients:

  • 200g new potatoes
  • 1 onion
  • 2 leeks
  • 1 hot chili pepper
  • 2 garlic cloves
  • 2 tsp ginger
  • 1 skinless chicken breast
  • 250ml chicken stock
  • 2 bell peppers
  • 750g cooked chicken pieces (optional)
  • Salt and pepper to taste
  • Coriander for garnish
  • Lemon juice (optional)

Instructions:

Step Description
1 Heat oil in a large pan over medium heat. Add onions, garlic, ginger, and chili. Cook for 3-4 minutes until softened.
2 Increase heat slightly. Add leeks and potatoes to the pan. Season with salt and pepper. Cover and cook for 5 minutes, stirring occasionally, until leeks start to soften.
3 Stir in chicken breast and cook until browned in patches. If using cooked chicken pieces, add them at the end.
4 Add bell peppers and chicken stock to the pan. Bring to a boil, then reduce heat and simmer for about 15 minutes until chicken is tender and potatoes are cooked through.
5 Taste and adjust seasoning as needed.
6 Serve hot, garnished with fresh coriander. Optionally, add a squeeze of lemon juice for extra zing.
