Instructions

Marinate the Chicken:
Start by preparing the marinade for the chicken. In a mixer, combine the dry red chillies, green chillies, fennel seeds, turmeric powder, and salt. Grind everything to a coarse paste. Transfer this paste to a mixing bowl and coat the chicken pieces well with the marinade. Let the chicken marinate for at least 10 minutes to allow the flavors to meld. -
Cook the Chicken:
Heat 2 tablespoons of oil in a pan over medium heat. Add the marinated chicken pieces and stir-fry for about 10 minutes until the chicken is fully cooked and has absorbed the flavors of the spices. Once the chicken is done, remove it from the pan and set it aside. -
Prepare the Macaroni:
In a separate pot, bring water to a boil, adding a pinch of salt. Cook the macaroni pasta in the boiling water until it is al dente (slightly firm to the bite). Drain the pasta and immediately rinse it under cold water to stop the cooking process. Toss the pasta with a little bit of oil to prevent it from sticking together. Set aside. -
Prepare the Sauce:
In the same pan used for the chicken, heat some more oil over medium heat. Add the finely chopped onion and sauté until it becomes translucent, which should take about 2 minutes. Then, add the finely chopped green chillies and ginger garlic paste. Continue sautéing until the raw smell of the garlic disappears. -
Add Tomato and Spices:
Add the tomato paste to the pan and stir well. Season with salt and garam masala powder, mixing everything thoroughly. Cover the pan and let it cook for 5 minutes, allowing the flavors to blend together. -
Combine Pasta and Chicken:
Reduce the heat to low. Add the cooked macaroni pasta and the sautéed chicken to the pan. Mix everything together gently, ensuring the pasta is coated with the tomato masala and the chicken is evenly distributed. Cover the pan and let it sit for another 2 minutes, allowing all the ingredients to marry together. -
Final Touches:
Just before serving, sprinkle freshly chopped coriander leaves over the top and give the dish one last stir.
