Cabbage (Patta Gobi/ Muttaikose) 1/4 cup, finely chopped
Spring Onion (Bulb & Greens) 1/4 cup, finely chopped
Coriander (Dhania) Leaves 1/4 cup, finely chopped
Oil 1 teaspoon, for cooking
Salt To taste

Instructions

  1. Preparing the Rice:
    Begin by washing the basmati rice thoroughly to remove excess starch. Soak the rice in 3 cups of water for 30 minutes. After soaking, drain the water.

  2. Cooking the Rice:
    Transfer the soaked rice to a cooking pan and add 4 cups of water. Season with a pinch of salt and add 2 tablespoons of oil. Bring it to a gentle simmer, covering the pan. Allow the rice to cook for about 15 minutes, or until most of the water has been absorbed.

  3. Stir-Frying the Vegetables:

  4. Adding the Chillies:
    Now, add the finely chopped Thai red chillies and green chillies to the wok. Continue to sauté for another 2-3 minutes, letting the heat from the chillies blend with the other ingredients.

  5. Final Touches:
    Stir in the soy sauce, coriander leaves, and salt. Add the cooled rice to the wok and toss everything together. Ensure that the rice is evenly mixed with the vegetables and spices.

  6. Taste and Adjust:
    Taste the fried rice and adjust the seasoning by adding more soy sauce or salt if necessary. Stir everything until well combined.

  7. Serving:
