Instructions:

  1. Begin by preparing the cho cho. Cut it diagonally in half and remove the seed. Then, grate the cho cho and set it aside.

  2. In a kadai or Dutch pot, add half a teaspoon of oil. Once the oil is heated, lightly roast the channa dal, urad dal, and dry red chili until they emit a fragrant aroma.

  3. Next, sautΓ© the grated cho cho separately in the same pot for about 5 minutes or until it turns tender.

  4. Now, it’s time to prepare the thuvaiyal paste. In a grinder, combine the roasted channa dal, urad dal, chili, grated coconut, and tamarind paste. Grind them to a medium consistency, adding a little water if necessary.

  5. Season the ground mixture with salt according to your taste preferences.

  6. In another Dutch pot, add half a teaspoon of oil. Once the oil is hot, add the mustard seeds. When they start to crackle, add the asafoetida powder and sautΓ© for a few seconds.

  7. Transfer this tempering to the prepared thuvaiyal mixture and mix it thoroughly.
