Spicy Jeruk Limao Chicken in Sweet Soy Sauce

Ingredients:

  • 1/2 kg chicken, cut into pieces
  • 2 bay leaves
  • 1 piece of ginger, smashed
  • 4 kaffir lime leaves, deveined
  • 3 Jeruk Limao fruits
  • Fresh lime juice, as needed
  • Salt, pepper, sugar, powdered broth, to taste
  • Sweet soy sauce (kecap manis), to taste
  • 250 ml water
  • 1 clove garlic, thinly sliced

Ground Spices:

  • 3 cloves garlic
  • 5 shallots
  • 10 red curly chilies
  • 5 red bird’s eye chilies

Instructions:

  1. Start by rinsing the chicken thoroughly and marinate briefly with lime juice and salt. Let it sit for about 10 minutes, then rinse clean.

  2. Heat oil in a pan and briefly fry the chicken until lightly golden. Set aside.

  3. In the same pan, sauté the ground spices, bay leaves, kaffir lime leaves, and ginger until fragrant.

  4. Add sliced garlic and cook for a moment until fragrant.

  5. Pour in water, season with salt, pepper, sugar, powdered broth, and sweet soy sauce. Stir well.

  6. Add the chicken back into the pan, mix until well-coated with the sauce. Adjust seasoning to taste.

  7. Allow the sauce to reduce and the flavors to meld. Once the chicken is fully cooked, turn off the heat.

  8. Squeeze fresh Jeruk Limao juice over the dish, stir well, and serve hot.
