Ingredients:
- 1/2 kg chicken, cut into pieces
- 2 bay leaves
- 1 piece of ginger, smashed
- 4 kaffir lime leaves, deveined
- 3 Jeruk Limao fruits
- Fresh lime juice, as needed
- Salt, pepper, sugar, powdered broth, to taste
- Sweet soy sauce (kecap manis), to taste
- 250 ml water
- 1 clove garlic, thinly sliced
Ground Spices:
- 3 cloves garlic
- 5 shallots
- 10 red curly chilies
- 5 red bird’s eye chilies

Start by rinsing the chicken thoroughly and marinate briefly with lime juice and salt. Let it sit for about 10 minutes, then rinse clean.

Heat oil in a pan and briefly fry the chicken until lightly golden. Set aside.

In the same pan, sauté the ground spices, bay leaves, kaffir lime leaves, and ginger until fragrant.
