Spicy Coconut Chicken (Ayam Santan Ngamuk)
Ingredients:
- 1/2 kg Chicken, cut as desired
- 6 cloves Garlic
- 4 cloves Shallots
- 2 oz Red Chilies, to taste
- Brown Sugar, 1 tablespoon
- Sweet Soy Sauce (Kecap Manis), 3 tablespoons
- 3 Kaffir Lime Leaves
- 4 Candlenuts, roasted
- 1 packet Lime Juice
- Ground Pepper, to taste
- 1/2 cup Thick Coconut Milk
- Granulated Sugar, to taste
- Salt, to taste
- Water
Instructions:
- Rinse the chicken thoroughly and marinate with lime juice. Let it sit for a few minutes.
- Grind the red chilies, garlic, shallots, and roasted candlenuts into a smooth paste.
- Sauté the ground spices until fragrant.
- Add kaffir lime leaves, brown sugar, salt, ground pepper, granulated sugar, and water. Bring to a boil.
- Once boiling, add the chicken and simmer until the sauce thickens over low heat.
- Stir in the thick coconut milk and additional water as needed. Simmer until the flavors meld.
- Adjust the seasoning with sweet soy sauce, and ensure the chicken is tender and the sauce has reduced.
- Once the sauce thickens and the chicken is cooked through, remove from heat.
- Serve hot and enjoy your Spicy Coconut Chicken!
