Spicy Egg and Tempe in Coconut Milk Sauce

Ingredients:

  • 5 large eggs (hard-boiled)
  • 1 small block tempeh (cut into small pieces)
  • 1 packet coconut milk (such as Kara brand)
  • For the spice paste:
    • 13 small red chilies
    • 4 shallots
    • 3 cloves garlic
    • 1/2 teaspoon coriander seeds
    • 1 large tomato
    • 4 candlenuts
    • 1 thumb-sized piece of ginger
    • 1 thumb-sized piece of turmeric
  • For the seasoning:
    • 1 onion (sliced thinly)
    • 2 kaffir lime leaves
    • Galangal (crushed, to taste)
    • Salt (to taste)
    • Sugar (to taste)
    • Seasoning powder (to taste)
    • 2 tablespoons sweet soy sauce
    • Cooking oil (for sautéing)

Instructions:

  1. Prepare the Eggs: Boil the eggs until hard-cooked, peel off the shells, and pierce the eggs with a fork (this helps prevent splattering when frying). Fry the eggs until golden, then drain and set aside.

  2. Prepare the Tempeh: Fry the cut tempeh pieces until crispy. Drain and set aside.

  3. Make the Spice Paste: In a blender or mortar and pestle, grind the chilies, shallots, garlic, coriander seeds, tomato, candlenuts, ginger, and turmeric into a smooth paste.

  4. Sauté the Aromatics: Heat some cooking oil in a pan over medium heat. Add the sliced onion, crushed galangal, and kaffir lime leaves. Sauté until the onions are translucent and fragrant.

  5. Cook the Spice Paste: Add the spice paste to the pan, stirring frequently until the oil starts to separate from the paste. Season with sugar, salt, seasoning powder, and sweet soy sauce. Mix well.

  6. Combine Ingredients: Add the fried eggs and tempeh to the pan. Stir gently to coat with the spice paste. Pour in the coconut milk and stir to combine.

  7. Simmer: Allow the mixture to simmer until heated through and the flavors meld together. Be careful not to let the coconut milk boil too vigorously to prevent it from curdling.

  8. Final Adjustments: Taste and adjust seasoning if necessary.

  9. Serve: Transfer to a serving dish and enjoy!
