Ingredients:

- 6 chicken eggs
- 1 block of white tofu
- 1 packet of instant coconut milk
- Spice Paste:
- 6 shallots
- 3 garlic cloves
- 4 cm roasted turmeric
- 1 cm ginger
- ¼ teaspoon ground pepper
- Salt, to taste
- 1 stalk lemongrass
- 1 bay leaf
- Oil, for sautéing
Instructions:
-
Prepare the Eggs and Tofu:
- Start by boiling the eggs until they are fully cooked. Once cooked, peel the eggs and set them aside.
- Cut the tofu into cubes and fry them in hot oil until they turn golden brown. Drain the excess oil and set aside.
-
Make the Spice Paste:
- Blend the shallots, garlic, roasted turmeric, and ginger into a smooth paste.
-
Cook the Spice Paste:
- Heat a little oil in a pan over medium heat. Add the spice paste to the pan, and sauté until it becomes fragrant.
- Add the lemongrass and bay leaf, continuing to sauté until the aroma is well-developed.
-
Combine Ingredients:
- Once the spice paste is fragrant, add the boiled eggs and fried tofu to the pan. Pour in a little water to help the flavors meld together. Cook until the spices are well absorbed by the eggs and tofu.
-
Add Coconut Milk:
- Bring the mixture to a gentle boil, then pour in the instant coconut milk. Stir gently, being careful not to break the coconut milk, and simmer until the sauce thickens and the flavors are well combined.
-
Final Touches:
- Once the dish is fully cooked and the sauce has thickened, remove it from the heat. Serve hot, garnished with fried shallots on top.
