Ingredients

Small Chili Peppers (to taste) 10 pieces
Lemongrass 1 stalk

Instructions

  1. Prepare the Ingredients:

    • Start by cutting the tofu and tempeh into small, bite-sized pieces.
    • Heat some cooking oil in a pan over medium heat and fry the tofu and tempeh until they are golden and partially cooked. Set aside.
  2. Sauté the Spices:

    • In a separate pan, add a little more oil and heat it over medium heat.
    • Add the shallots, garlic, roasted coriander seeds, galangal, curly red chilies, and small chili peppers. Sauté the mixture until fragrant and the shallots become translucent.
  3. Combine the Ingredients:

    • Add the fried tofu and tempeh into the pan with the sautéed spices.
    • Introduce the kacang koro (which should be pre-boiled until tender) and stir well to combine all the ingredients.
  4. Simmer in Coconut Milk:

    • Pour in the instant coconut milk and add enough water to cover the ingredients.
    • Toss in the lemongrass and bay leaves.
    • Allow the mixture to simmer gently, stirring occasionally, until all the ingredients are tender and well combined, about 15–20 minutes.
  5. Season and Finish:

    • Once the dish is cooked through, taste and season with sugar and salt as needed.
    • Gently add the green onion, and bring the dish to a brief boil before removing it from the heat.
  6. Serve:
