Recipe: Aloo Bhath

Ingredients:

  • 4 potatoes
  • 2 onions
  • 1/2 coconut
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon turmeric
  • 1 clove
  • 1 cinnamon stick
  • 1 cup basmati rice
  • Water (4 cups)
  • Oil (for frying and cooking)
  • Salt (to taste)

Instructions:

  1. Preparation:

    • Wash basmati rice and soak it in water for 15 minutes.
    • Peel the potatoes and cut them into big pieces.
    • Thinly slice the onions.
  2. Prepare the Masala Paste:

    • In a pan, heat a little oil and fry the sliced onions until they turn golden brown.
    • Once fried, transfer the onions to a blender along with coconut, red chili powder, garam masala, turmeric, clove, and cinnamon.
    • Grind the mixture into a thick paste.
  3. Cooking:

    • In a pressure cooker or deep saucepan, heat some oil.
    • Add the prepared masala paste and fry it for about 2-3 minutes until fragrant.
    • Next, add the potato pieces to the pan and sauté them along with the masala paste for another 2-3 minutes.
    • Drain the soaked rice and add it to the pan.
    • Pour in 4 cups of water and season with salt according to taste.
    • Stir everything well and cover the pressure cooker or saucepan with its lid.
    • Cook on medium heat until the potatoes are tender and the rice is fully cooked. This usually takes about 10 minutes in a pressure cooker.
  4. Serving:

    • Once cooked, remove from heat and let it sit for a few minutes.
    • Serve the hot and aromatic Aloo Bhath with some refreshing raita (yogurt dip) and/or crispy papad on the side.
