Singapore Turkey Stew

Don’t let the list of ingredients scare you…this goes together quickly and easily (I made it after work, it was on the table in 45 minutes). I found this in Sunset magazine.

Ingredients:

  • 1 lb lean ground turkey
  • 1/2 tsp Chinese five spice powder
  • 1/2 tsp salt
  • 1/2 cup all-purpose flour
  • 2 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 1 can (14 oz) coconut milk
  • 2 cups chicken broth
  • 1 bok choy, chopped
  • 1 can (14 oz) Italian tomatoes, diced
  • 1 can (8 oz) sliced water chestnuts, drained
  • 2 green onions, sliced
  • 1 lime, juiced
  • 1/4 cup fresh cilantro leaves, chopped

Instructions:

    • Add the meatballs in a single layer and cook, turning often, until lightly browned all over and barely pink in the center, about 5-7 minutes.
    • Using a slotted spoon, transfer the meatballs to a plate.
  3. Prepare the Stew:

    • Add minced garlic and grated ginger to the pan and stir until fragrant, about 30 seconds.
    • Pour in the coconut milk and chicken broth, then add the cooked meatballs back to the pan.
    • Bring the mixture to a simmer.
  4. Simmer the Stew:

    • Adjust the heat to maintain a simmer.
    • Cover and cook until the meatballs are no longer pink in the center, about 5 minutes.
  5. Add Vegetables:

    • Stir in chopped bok choy, diced tomatoes, sliced water chestnuts, sliced green onions, and lime juice.
    • Cook, stirring often, until the bok choy leaves are wilted and stems are barely tender to bite, about 5 minutes.
  6. Serve:

    • Sprinkle the stew with chopped cilantro.
    • Serve directly from the pan and enjoy!
