Instructions:

  1. Prepare the Ingredients:
    Start by washing the sweet corn and drumstick leaves thoroughly. Once cleaned, set them aside.

  2. Tempering the Spices:
    Heat oil in a pan or kadhai. Once the oil is hot, add cumin seeds and mustard seeds. Reduce the heat once the mustard seeds start popping.

  3. Cook the Corn:
    Add the sweet corn to the pan and cook for about 2 minutes, allowing it to lightly sauté and absorb the flavors from the tempering.

  4. Add Spices:
    Sprinkle in turmeric powder, red chili powder, and salt. Stir the ingredients well so that the spices coat the corn evenly. Cook for an additional minute.

  5. Add Drumstick Leaves and Sweetness:
    Next, add the drumstick leaves along with powdered jaggery to the mixture. Add a splash of water (about 1/4 cup), and stir well to combine all the ingredients.

  6. Cook Until Soft:
    Cover the pan and cook on a low flame until both the drumstick leaves and corn become soft and tender. Ensure that the flavors meld together well.

  7. Serve:
