Chatpatti Makai Masala Recipe

This vibrant and flavorful Indian recipe combines sweet corn with a tantalizing blend of spices, peanuts, and fresh coriander. Instructions:

  1. Cook the Sweet Corn:

    • Begin by placing the sweet corn in a pressure cooker along with enough water and a pinch of salt.
    • Close the cooker and cook the corn for about 2 whistles (cities).
    • Once done, turn off the heat and allow the pressure to release naturally.
    • After opening the cooker, set the corn aside to drain any excess water.
  2. Prepare the Masala:

    • Heat oil in a large pan or kadhai over medium heat.
    • Add the cumin seeds, grated ginger, and a pinch of asafoetida (hing) to the hot oil. Sauté for about 30 seconds until the cumin starts to splutter.
    • Add the ground peanuts to the pan and cook for another minute, stirring occasionally.
  3. Spice it Up:

    • To the pan, add the freshly pureed tomatoes, turmeric powder, red chili powder, garam masala powder, and chopped green chilies.
    • Stir the mixture and cook for about 5 minutes or until the tomatoes soften and the oil begins to separate from the masala.
  4. Combine Corn and Masala:

    • Add the cooked sweet corn to the pan, followed by salt to taste. Mix everything together thoroughly.
    • Let the corn cook in the masala for about 3 to 4 minutes to absorb the flavors.
  5. Simmer and Garnish:

    • Cover the pan with a lid and allow the corn to simmer for an additional 5 minutes to enhance the flavors.
    • Once done, remove the lid, turn off the heat, and garnish the dish with freshly chopped coriander leaves.
  6. Serve:

    • Serve the spicy Chatpatti Makai Masala hot, paired with soft phulkas or a refreshing Tomato Onion Tadka Raita for a complete meal.

  • For an extra burst of flavor, you can sprinkle some fresh lemon juice over the finished dish just before serving.
