1 Celery stalk
1/2 Green pepper
1/2 Garlic cloves
2 cups Salsa
1 cup Reduced-sodium tomato sauce
1 cup Brown rice
1 tsp Thyme
1 1/2 cups Vegetable broth
1 can Red kidney beans, drained
1 can Corn kernels, drained
to taste Freshly roasted or grilled red peppers (for garnish)

Instructions

  1. Heat oil in a large non-stick pan over medium heat.

  2. Add diced onions, sliced celery, chopped green peppers, and minced garlic to the pan.

  3. Sauté the vegetables for about 5 minutes or until they are just tender, stirring occasionally to prevent sticking or burning.

  4. Stir in the salsa, reduced-sodium tomato sauce, brown rice, thyme, and red pepper to the pan.

  5. Pour in 1 1/4 cups of vegetable broth, reserving the remaining 1/4 cup for later.

  6. Bring the mixture to a boil.

  7. Reduce the heat to low, cover the pan, and simmer for 10 minutes, allowing the flavors to meld and the rice to absorb the liquid.

  8. Uncover the pan and stir in the drained red kidney beans and corn kernels.

  9. Pour in the remaining 1/4 cup of vegetable broth to keep the jambalaya moist.

  10. Cover the pan again and simmer for an additional 5-10 minutes or until the rice is soft and cooked through.

  11. Before serving, add some chopped, freshly roasted or grilled red peppers on top of the jambalaya for a vibrant garnish and extra flavor.
