  • 2 tbsp shortening
  • 1 onion
  • 1 green pepper
  • 1 celery stalk
  • 4 garlic cloves
  • 1 chicken, cut into pieces
  • 2 chorizo sausages
  • 2 andouille sausages
  • 2 tomatoes, diced
  • 2 1/2 cups diced tomatoes
  • 2 tsp thyme
  • 1 tsp oregano
  • 1 tbsp parsley
  • 1 1/2 tsp cayenne pepper
  • 1 tsp chili powder
  • Salt, to taste
  • Black pepper, to taste
  • 6 cups cooked long-grain rice
  • Cayenne pepper, to taste
  • Tabasco sauce, to taste

Instructions:

  1. In a large saucepan over medium heat, melt the shortening.
  2. Cook the chicken pieces in the melted shortening until they are browned on all sides and about halfway cooked, approximately 20 minutes.
  3. Remove the chicken from the saucepan and add the onion, green pepper, celery, and garlic. Cook slowly, stirring occasionally, until the onions are tender.
  4. Add the chorizo and andouille sausages to the saucepan and cook for an additional 10 minutes.
  5. Return the cooked chicken to the saucepan and add all the remaining ingredients except for the rice. Stir everything together well.
  6. Cover the saucepan and simmer for 30 minutes, stirring occasionally.
  7. Remove the cover and continue to cook until the broth reduces slightly. Be cautious not to let it become too thick, as the rice will absorb the liquid.
  8. Serve the cooked rice in bowls and ladle the Jambalaya on top. Offer additional cayenne pepper or Tabasco sauce at the table for those who prefer extra heat.
