- 2 chorizo sausages
- 2 andouille sausages
- 2 tomatoes, diced
- 2 1/2 cups diced tomatoes
- 2 tsp thyme
- 1 tsp oregano
- 1 tbsp parsley
- 1 1/2 tsp cayenne pepper
- 1 tsp chili powder
- Salt, to taste
- Black pepper, to taste
- 6 cups cooked long-grain rice
- Cayenne pepper, to taste
- Tabasco sauce, to taste
Instructions:
- In a large saucepan over medium heat, melt the shortening.
- Cook the chicken pieces in the melted shortening until they are browned on all sides and about halfway cooked, approximately 20 minutes.
- Remove the chicken from the saucepan and add the onion, green pepper, celery, and garlic. Cook slowly, stirring occasionally, until the onions are tender.
- Add the chorizo and andouille sausages to the saucepan and cook for an additional 10 minutes.
- Return the cooked chicken to the saucepan and add all the remaining ingredients except for the rice. Stir everything together well.
- Cover the saucepan and simmer for 30 minutes, stirring occasionally.
- Remove the cover and continue to cook until the broth reduces slightly. Be cautious not to let it become too thick, as the rice will absorb the liquid.
- Serve the cooked rice in bowls and ladle the Jambalaya on top. Offer additional cayenne pepper or Tabasco sauce at the table for those who prefer extra heat.
