Ayam Geprek Recipe: Crispy Fried Chicken with Spicy Sambal
Ingredients:
- Chicken:
- 1/4 kg chicken breast, cut into pieces
- 4 tablespoons cornstarch
- 6 tablespoons all-purpose flour
- Ground black pepper, to taste
- Chicken bouillon powder, to taste
- Garlic powder, to taste
- Oil for frying, as needed
- Fresh vegetables (lalapan), for serving
- Sambal:
- 3 cloves garlic
- 2 shallots
- 4 bird’s eye chilies (adjust to taste)
- Palm sugar, to taste
- Lime juice, to taste

Prepare the Chicken:
- Begin by cutting the chicken breast into three pieces.
- Season the chicken with salt and pepper. Allow it to marinate for a few minutes to absorb the flavors.
- In a bowl, mix together the cornstarch, all-purpose flour, black pepper, and chicken bouillon powder. Coat each piece of chicken thoroughly with this mixture.
- Heat oil in a pan over medium heat. Fry the coated chicken pieces until they are golden brown and crispy. Once cooked, remove them from the pan and drain on paper towels.

Prepare the Sambal:
- In a small pan, dry-fry the garlic, shallots, and bird’s eye chilies until they are slightly dried out and fragrant.
- Transfer the fried ingredients to a mortar and pestle. Grind them into a coarse paste.
- Add palm sugar to the paste and continue to grind until well combined.
- Squeeze in some lime juice to taste, mixing well.

Combine and Serve:
- Place the fried chicken pieces on a serving plate. Using a spoon or a pestle, gently smash the chicken pieces to release their juices.
- Pour the prepared sambal over the chicken and toss gently to coat the chicken evenly with the sambal.
- Serve the Ayam Geprek with fresh vegetables (lalapan) on the side.
