Sambel Kulit Sapi with Red Chilies
Ingredients:
- 1/4 pound beef skin, cut into squares (or to your preference)
- 1 handful red chilies
- 2 tomatoes
- 4 shallots, thinly sliced
- 1 garlic clove
- 5 large red chilies, sliced on the diagonal (or to taste)
- Salt, to taste
- A pinch of MSG (optional)
- A small amount of shrimp paste (terasi)

Prepare the Spices: Begin by grinding all the spices, except for the shallots and large red chilies. Set aside.

Combine and Cook: Add the fried beef skin to the pan with the spice mixture. Stir well to ensure the beef skin is evenly coated with the spices. Cook for a few minutes, allowing the flavors to meld and the spices to be absorbed.
