Spicy Crispy Beef Skin with Red Chilies

Sambel Kulit Sapi with Red Chilies

Ingredients:

  • 1/4 pound beef skin, cut into squares (or to your preference)
  • 1 handful red chilies
  • 2 tomatoes
  • 4 shallots, thinly sliced
  • 1 garlic clove
  • 5 large red chilies, sliced on the diagonal (or to taste)
  • Salt, to taste
  • A pinch of MSG (optional)
  • A small amount of shrimp paste (terasi)

Instructions:

  1. Prepare the Spices: Begin by grinding all the spices, except for the shallots and large red chilies. Set aside.

  2. Fry the Beef Skin: In a pan, heat oil and fry the cut beef skin until it is crisp and golden. This should take about 5 minutes. Once done, remove from the pan and set aside.

  3. Sauté Shallots and Chilies: In the same pan, add a little more oil if needed and sauté the sliced shallots and large red chilies until they become soft and translucent.

  4. Cook the Spice Paste: Add the ground spice mixture to the pan with the shallots and chilies. Fry until fragrant and the oil starts to separate from the paste.

  5. Combine and Cook: Add the fried beef skin to the pan with the spice mixture. Stir well to ensure the beef skin is evenly coated with the spices. Cook for a few minutes, allowing the flavors to meld and the spices to be absorbed.

  6. Serve: Once the beef skin is well-coated and the flavors are thoroughly mixed, remove from heat. Serve warm as a flavorful accompaniment or snack.
