Spicy Crispy Fried Chicken (Ayam Geprek Pedas)

Ingredients:

  • 2 chicken thighs (bone-in, skin-on)
  • Cornstarch, as needed
  • All-purpose flour, as needed
  • 3 teaspoons salt
  • 1 packet ground black pepper
  • 5 cloves garlic
  • 25 curly red chilies
  • Water, as needed

Instructions:

  1. Prepare the Chicken:
    Begin by washing the chicken thighs thoroughly. Pat them dry with paper towels to remove excess moisture.

  2. Make the Dry Coating:
    In a bowl, combine cornstarch, all-purpose flour, salt, and ground black pepper. Mix well to ensure even distribution of the seasonings. For a quicker option, you can use a pre-seasoned crispy flour mix, which is conveniently available in red and blue packaging.

  3. Prepare the Wet Batter:
    Create a wet batter by mixing a small amount of the dry coating mixture with a bit of water. The batter should be thick enough to coat the chicken without dripping excessively.

  4. Coat the Chicken:
