Ayam Pedes ala Richeese: Spicy Fried Chicken Recipe

  • Sauce Ingredients:
    • 4 tablespoons barbecue sauce (Del Monte or your preferred brand)
    • 2 tablespoons tomato sauce
    • 2 tablespoons chili sauce
    • 1 tablespoon oyster sauce
    • 1/2 tablespoon all-purpose flour
    • 1/2 teaspoon black pepper
    • 150 ml water
    • 2 tablespoons chili powder or Bon Cabe level 30

Instructions:

  1. Prepare the Chicken:

    • Clean the chicken breasts and mix them with the minced garlic and grated ginger.
    • Refrigerate the marinated chicken for at least 1 hour to let the flavors meld and infuse into the meat.
  2. Coat and Fry the Chicken:

    • After marinating, dip the chicken breasts into cold water, ensuring they are well-coated.
    • Roll the chicken in a mixture of all-purpose flour and rice flour to create a light, crispy coating.
    • Heat oil in a frying pan over medium heat and fry the coated chicken until golden brown and crispy. Once done, remove the chicken from the oil and let it drain on a paper towel.
  3. Prepare the Sauce:

    • In a saucepan, melt margarine over medium heat.
    • Add the barbecue sauce, tomato sauce, chili sauce, and oyster sauce to the melted margarine. Stir well to combine.
    • Dissolve 1/2 tablespoon of flour in the water and add this mixture to the saucepan. Continue stirring until the sauce comes to a boil and thickens.
  4. Combine and Serve:

    • Once the sauce has thickened, add the fried chicken pieces to the saucepan and toss them gently until they are fully coated with the sauce.
    • Sprinkle with additional chili powder or Bon Cabe for extra heat, if desired.
