Ayam Geprek Rumahan Hot Jeletot

Ingredients:

  • For the Chicken:

    • 1 chicken fillet
    • 2 tablespoons Sajiku all-purpose seasoning flour
    • 2 tablespoons rice flour
    • 2 tablespoons all-purpose flour
    • 1/2 teaspoon fine salt
  • For the Sambal Geprek:

    • 2 red chilies
    • 12 bird’s eye chilies
    • 5 shallots
    • 3 cloves garlic
    • A pinch of salt
    • A pinch of white sugar
    • A small amount of oil (from frying the sambal)

Instructions:

  1. Prepare the Chicken: Clean the chicken fillet and cut it into thin, bite-sized pieces.

  2. Prepare the Flour Coating: In a bowl, combine the Sajiku all-purpose seasoning flour, rice flour, all-purpose flour, and fine salt. Mix well. Gradually add water to the mixture until you achieve a medium consistency (similar to the batter used for frying bananas).

  3. Coat and Fry the Chicken: Dip each piece of chicken into the flour mixture, ensuring it’s well-coated. Heat oil in a frying pan over medium heat. Fry the chicken pieces one by one until they turn golden brown and are cooked through. Set aside.

  4. Prepare the Sambal: Chop the red chilies, bird’s eye chilies, shallots, and garlic into small pieces. Heat a small amount of oil in a pan and fry the chopped ingredients until they are well-cooked. Add a pinch of salt and white sugar to taste. Using a mortar and pestle or a food processor, grind the sambal mixture until it reaches a slightly coarse texture. Stir in a bit of oil from frying the sambal to enhance the flavor.

  5. Assemble the Dish: Place the fried chicken pieces on a serving plate. Gently crush each piece with the back of a spoon or a mortar to release its juices and flavors. Top the chicken with the freshly prepared sambal.
