Title: Spicy Bensu-Style Smashed Chicken (Ayam Geprek)

Ingredients:

  • 3 pieces of chicken thighs
  • 4 cloves garlic
  • 3 shallots
  • 2 red chilies
  • 10 bird’s eye chilies (cabe rawit)
  • All-purpose flour or wheat flour
  • Salt
  • 1 egg, beaten
  • Shrimp paste (terasi)

Steps:

  1. First, marinate the chicken thighs with salt and let them sit until tender.

  2. Prepare the seasoning paste for the chicken. Divide the flour into two portions. Use one portion to coat the chicken after dipping it into the beaten egg. Leave the other portion of flour as is. Coat the chicken evenly with the flour and egg mixture to create a crispy texture.

  3. Allow the coated chicken to rest for a few minutes to ensure the flour sticks well to the chicken.

  4. Fry the chicken in hot oil until golden brown and crispy. Drain excess oil and set aside.

  5. Now, let’s prepare the spicy seasoning paste (bumbu geprek). Fry the garlic, shallots, red chilies, bird’s eye chilies, and shrimp paste until fragrant and golden brown.

  6. Remove from heat and grind the fried ingredients with salt, sugar, and other seasoning to taste.

  7. To serve, place the fried chicken on a plate and generously spread the spicy seasoning paste over it. Geprek (smash) the seasoning into the chicken using a pestle or spoon to release more flavor.

  8. Your Spicy Bensu-Style Smashed Chicken (Ayam Geprek) is ready to be enjoyed!
