Preparation Time: 15 minutes

Cooking Time: 30 minutes

Serves: 4 people

Instructions:

  1. Prepare the Curd: Begin by beating the curd until smooth and set it aside. This will be used to create the rich, creamy gravy for the dum arbi.

  2. Fry the Arbi: Heat 2 tablespoons of oil in a pan. Add the boiled and chopped arbi pieces to the pan and fry them until they turn golden brown and crispy on the edges. Once done, remove them from the pan and set them aside.

  3. Prepare the Spice Mixture: In the same pan, add another 2 tablespoons of oil. Heat it up and toss in the celery and a pinch of asafoetida (hing). Stir briefly until aromatic. Add the ginger-garlic paste and mix well. Let it sauté for a couple of minutes to release its fragrance.

  4. Cook the Onions and Tomatoes: Next, add the finely chopped onion and green chillies to the pan. Cook until the onions turn soft and translucent. Then, add the chopped tomatoes. Let the tomatoes cook down until they soften, and the oil starts to separate from the mixture.

  5. Add the Spices: Sprinkle in the turmeric powder, coriander powder, and red chilli powder. Stir well to ensure the spices blend into the onion-tomato mixture.

  6. Add the Curd: Reduce the heat to low and pour the beaten curd into the pan. Stir continuously for 2 minutes to ensure the curd does not curdle and mixes well with the other ingredients.

  7. Season: Add salt to taste, followed by garam masala powder. Stir again to incorporate the flavors.

  8. Cook the Dum Arbi: Add the fried arbi pieces to the pan, and mix them gently with the curd and spice gravy. Pour in about 1/2 cup of water, then cover the pan with a tight-fitting lid. Let the vegetable cook on low flame for 10 minutes, allowing the flavors to meld together.

  9. Garnish and Serve: Once done, sprinkle fresh coriander leaves over the top for a burst of color and flavor. Serve hot with tawa paratha or steamed rice and boondi raita for a complete meal.

Serving Suggestions:

  • Pair with: Serve Dum Arbi with soft Tawa Paratha or warm rice for a fulfilling meal.
  • Accompanying Side: A cool and refreshing boondi raita complements the spice and heat of this dish perfectly.

Tips for Perfect Dum Arbi:

  • Use Fresh Curd: Fresh curd (yogurt) adds to the creaminess and tanginess of the gravy.
  • Fry the Arbi Well: Make sure the arbi is fried until golden brown. This will help it hold its shape and add a slight crunch to the dish.
  • Low Flame Cooking: Always cook the vegetable on low flame to let the spices and curd infuse the arbi for maximum flavor.

Dum Arbi is a delightful and nutritious dish, combining the earthy flavors of arbi with the richness of curd and a perfect balance of spices. Whether it’s a weekday dinner or a special occasion, this recipe is sure to please everyone at the table. Enjoy the delicious journey of flavors in every bite!
