Spicy Egg and Potato Delight (Telur Kentang Balado)
Ingredients:
- 7-10 large eggs
- 10 shallots
- 5 cloves garlic
- 3 kaffir lime leaves
- 1 small packet chicken bouillon (Royco)
- Brown sugar to taste
- White sugar to taste
- Salt to taste
- 1 large potato (or pre-fried potato strips)
- 7 curly red chilies
- 15-20 bird’s eye chilies
- 2 tomatoes
- Cooking oil
- Water

Prepare the Ingredients:
- Slice the tomatoes thinly.
- Boil the eggs until fully cooked, then peel the shells.
- Peel the potato and cut it into rectangular pieces. Wash thoroughly, then fry until golden and crispy. Alternatively, use pre-fried potato strips.

Make the Spice Paste:
- Blend together 7 shallots (reserve 3 shallots, thinly sliced for sautéing), garlic, curly red chilies, and bird’s eye chilies into a smooth paste.

Sauté Aromatics:
- Heat some oil in a pan. Sauté the reserved sliced shallots until they become soft and aromatic.
- Add the blended spice paste to the pan. Continue to cook, stirring occasionally, until the spices become fragrant and the oil starts to separate.

- Add the sliced tomatoes and kaffir lime leaves to the pan. Stir well.
- Pour in some water and add the chicken bouillon, brown sugar, and salt. Stir until the sugar dissolves and the seasoning is well incorporated.

- Gently add the boiled eggs to the pan. Stir carefully to coat the eggs with the spice mixture.
- Allow the mixture to simmer until the liquid starts to reduce and the eggs are well infused with the flavors.

- Add the fried potato pieces to the pan. Stir gently to combine, ensuring the potatoes are evenly coated with the spice paste.

- Taste the dish and adjust seasoning if needed by adding more salt or sugar to taste.
- Once the sauce has thickened and the flavors are well-balanced, turn off the heat.
