Ingredients:

  • 1 cup cooked rice
  • 5 eggs
  • 1 onion, finely chopped
  • 4 slices bread
  • 1 teaspoon ginger-garlic paste
  • ½ inch cinnamon stick
  • 2 cloves
  • ½ teaspoon cumin seeds
  • 3 whole black peppercorns
  • 1 teaspoon sambar powder
  • Salt to taste
  • 1 teaspoon oil

Preparation Time: 10 minutes

Instructions:

  1. Begin by finely chopping the onion and breaking the eggs into a bowl. Whisk the eggs well.
  2. Heat oil in a pan, and add the cinnamon stick, cloves, and cumin seeds. Let them sizzle for about 15 seconds.
  3. Add the chopped onions to the pan and sauté until soft and translucent.
  4. Stir in the ginger-garlic paste and cook for another minute, allowing it to release its aroma.
  5. Pour in the beaten eggs and cook them like scrambled eggs until they are fully cooked and lightly browned.
  6. Add black pepper, sambar powder, and salt. Mix everything well, and continue cooking for another 2 minutes to combine the flavors.
  7. Tear the bread slices into small pieces and add them to the pan. Cook for about 2 minutes until they become slightly crispy.
  8. Add the cooked rice, mixing well to incorporate all the ingredients evenly.
  9. Cook for an additional 3 minutes, stirring occasionally to prevent sticking.
  10. Garnish with fresh coriander leaves and serve hot.
