Fabulous Chili Con Carne With Beans ๐ŸŒถ๏ธ๐Ÿฅฉ

Overview:

This fabulous chili con carne recipe is a treasure from my dear friend Jackie, who used to whip it up every year for her Grey Cup party. Packed with flavor and a delightful kick, it’s perfect for those chilly evenings or gatherings when you crave something hearty and comforting. With a blend of spices, lean ground beef, and nutritious kidney beans, this dish promises a satisfying meal that will warm both body and soul.

  • Prep Time: 20 minutes
  • Cook Time: 3 hours
  • Total Time: 3 hours and 20 minutes
  • Servings: Varies

Ingredients:

Quantity Ingredient
1 lb Lean ground beef
1 can Kidney beans
1 can Italian stewed tomatoes
1 can Tomato sauce
1 cup Mild salsa
1 cup Hot salsa
1 Onion
1 Green pepper
1 clove Garlic clove
1/2 tsp Paprika
1 tbsp Worcestershire sauce
1 tbsp Chili powder
1/8 tsp Cayenne
To taste Salt

Instructions:

  1. Brown Beef with Onion & Green Pepper:

    • In a large kettle or Dutch oven, heat a splash of oil over medium-high heat. Add the lean ground beef, chopped onion, and diced green pepper. Cook, stirring occasionally, until the beef is browned and the vegetables are tender.
  2. Drain Off Grease:

    • Once the beef is cooked through and the vegetables are soft, carefully drain off any excess grease from the pot. This step helps reduce the fat content of the chili while keeping all the delicious flavors intact.
  3. Prepare Kidney Beans:

    • While the beef is browning, drain the kidney beans in a colander and rinse them under cold water. This helps remove any excess salt and starch from the beans, resulting in a cleaner flavor and texture.
  4. Combine Ingredients:

    • Once the beef is browned and drained, add the kidney beans, Italian stewed tomatoes, tomato sauce, mild salsa, hot salsa, minced garlic clove, paprika, Worcestershire sauce, chili powder, cayenne, and salt to the pot. Stir well to combine all the ingredients evenly.
  5. Simmer Chili:

    • Bring the mixture to a gentle simmer over medium heat. Cover the pot with a lid and let the chili cook for 2 to 3 hours, stirring occasionally. This slow cooking process allows the flavors to meld together beautifully, resulting in a rich and flavorful chili.
  6. Serve and Enjoy:

    • Once the chili is done simmering and has reached your desired consistency, ladle it into bowls and serve hot. Garnish with your favorite toppings, such as shredded cheese, sour cream, diced avocado, or fresh cilantro. Pair with warm cornbread or tortilla chips for a complete and satisfying meal.

Tips and Variations:

  • For a vegetarian version of this chili, simply omit the lean ground beef and double up on the beans or add extra veggies like diced bell peppers, zucchini, or mushrooms.
  • Adjust the spiciness of the chili to your taste by increasing or decreasing the amount of chili powder and cayenne pepper.
  • This chili can be made ahead of time and stored in an airtight container in the refrigerator for up to 3 days. It also freezes well, so you can portion it out and freeze it for future meals.
  • Serve leftovers over baked potatoes, rice, or pasta for a delicious twist on classic comfort food.
