Spicy Quesadilla ๐ŸŒถ๏ธ

Description: Very, very good! If you can find the sundried tomato tortillas, they add a wonderful taste compared to the plain ones. We pass the salsa also, with the sour cream. More heat can be added if desired and the recipe can be scaled down to one or two.

Ingredients:

Quantity Ingredient
6 10-inch sun-dried tomato tortillas
1 Olive oil
2 Onion
1 Black olives
2 Garlic cloves
1/2 Jalapeno
2 tsp Chili powder
1 tsp Ground cumin
1/4 tsp Cayenne pepper
2 cups Cheese (shredded)
1 Sour cream (for serving)

Instructions:

  1. Preheat Oven: Preheat your oven to 450ยฐF (230ยฐC).

  2. Prepare Skillet: In a large skillet, heat olive oil over medium heat.

  3. Sautรฉ Vegetables: Add diced onions, sliced black olives, minced garlic, and chopped jalapeno to the skillet. Sprinkle with chili powder, ground cumin, and cayenne pepper. Cook, stirring often, until the peppers and onions are limp, about 5 minutes.

  4. Add Olives: Remove the skillet from heat and add the black olives to the mixture. Mix well to combine.

  5. Assemble Quesadillas: Arrange 3 tortillas in a single layer on baking sheets. Divide the onion and pepper mixture evenly over the tortillas, spreading it to 1/2 inch off the edges. Sprinkle shredded cheese evenly over the mixture.

  6. Top and Press: Place the remaining 3 tortillas on top of the cheese-covered tortillas. Press down lightly to seal the quesadillas.

  7. Bake: Transfer the baking sheets to the preheated oven. Bake the quesadillas until the tortillas are lightly browned and the cheese is melted, about 8 to 10 minutes.

  8. Slice and Serve: Remove the quesadillas from the oven and let them cool for a minute or two. Cut each quesadilla into 4 to 6 wedges. Arrange them on a platter and serve with sour cream, if desired.
