Description

A very easy and basic fish soup with a spicy and creamy aioli sauce. Hearty and warming, this recipe has been handed down and passed around for generations. Its origin is unknown but likely English.

Ingredients

  • 1 red snapper
  • 4 halibut steaks
  • 1 tablespoon butter
  • 1 onion
  • 3 garlic cloves
  • 1 green pepper
  • Fresh oregano, to taste
  • Fresh thyme, to taste
  • 8 stewed tomatoes
  • 4 cups chicken broth
  • 1 splash of white wine
  • For the aioli:
    • 1 cup mayonnaise
    • 2 garlic cloves
    • Juice of 1 lemon
    • Cayenne pepper, to taste

Recipe Instructions

  1. Saute Aromatics: In a large saucepan, melt butter over medium heat. Add chopped green pepper, diced onion, and minced garlic cloves. Saute until the onion becomes translucent and the aromatics are fragrant.

  2. Add Broth and Tomatoes: Pour in the chicken broth and add the stewed tomatoes. If desired, you can also add diced potatoes at this stage for added heartiness. Bring the mixture to a boil, then reduce the heat to a simmer.

  3. Season and Simmer: Season the soup with fresh oregano, thyme, a splash of white wine, salt, and pepper to taste. Let the soup simmer for about 3 minutes, or until the potatoes (if added) are tender, stirring occasionally to blend the flavors.

  4. Cook Fish: Carefully add the fish steaks to the simmering soup. Cook for 5-7 minutes, or until the fish is cooked through and flakes easily with a fork.

  5. Prepare Aioli: While the fish is cooking, prepare the aioli. In a small bowl, mix together mayonnaise, minced garlic cloves, lemon juice, and cayenne pepper to taste. Adjust the seasoning according to your preference.

  6. Serve: Once the fish is cooked, ladle the hot soup into large bowls. Serve with plenty of crusty sourdough bread on the side. Add a dollop of the spicy garlic aioli on top of each serving for an extra burst of flavor.
