Ikan Tamban Masak Sambel Dower Recipe

Ingredients:

  • 1/4 kg ikan tamban (mackerel)
  • 4 cloves bawang merah (red shallots)
  • 4 cloves bawang putih (garlic)
  • 5 red chilies
  • 15 bird’s eye chilies
  • 2 small tomatoes
  • 1 lembar daun jeruk (kaffir lime leaf)
  • Salt, to taste
  • Sugar, to taste
  • Flavor enhancer (optional), to taste

Instructions:

  1. Prepare the Fish:

    • Begin by cleaning the ikan tamban thoroughly. Pat the fish dry and then fry until golden brown. Set aside.
  2. Make the Spice Paste:

    • In a blender or food processor, combine the red shallots, garlic, red chilies, bird’s eye chilies, and tomatoes. Blend until the mixture forms a smooth paste.
  3. Cook the Spice Paste:

    • Heat a little oil in a pan over medium heat. Add the spice paste and sauté until it becomes fragrant and the oil starts to separate from the paste.
  4. Season the Paste:

    • Season the spice paste with salt, sugar, and a flavor enhancer if using. Adjust the seasoning to your taste.
  5. Combine with Fish:

    • Gently add the fried ikan tamban to the pan with the spice paste. Stir well to coat the fish evenly with the paste. Cook for a few minutes until the fish is heated through and the flavors meld together.
  6. Serve:
