Spicy Mackerel Stir-Fry (Oseng Pedas Ikan Kembung)

Ingredients:

  • 5 whole mackerel fish
  • 3 cloves garlic
  • 3 shallots
  • 5 bird’s eye chilies
  • 1 large chili pepper
  • 1 packet fried fish seasoning (e.g., Indofood)
  • Salt to taste
  • Cooking oil

Instructions:

  1. Prepare the Fish: Rinse the mackerel thoroughly under cold water. Pat dry with paper towels and then rub the fish with the fried fish seasoning. Let it marinate for 15 minutes to allow the flavors to infuse.

  2. Prep the Aromatics: While the fish is marinating, slice the garlic, shallots, bird’s eye chilies, and large chili pepper.

  3. Fry the Fish: Heat a generous amount of cooking oil in a skillet over medium heat. Fry the mackerel until golden brown and cooked through. Remove the fish from the skillet and drain on paper towels to remove excess oil.

  4. Sauté the Aromatics: In the same skillet, add a bit more oil if needed. Sauté the garlic, shallots, and chilies until they turn golden brown and fragrant. Add a pinch of salt to enhance the flavors.

  5. Combine and Serve: Return the fried mackerel to the skillet and toss gently with the sautéed aromatics until everything is well combined. Adjust seasoning with additional salt if necessary.

  6. Serving: Your spicy mackerel stir-fry is now ready to be served. Enjoy it hot as a flavorful main dish!

This recipe brings together the rich flavors of seasoned mackerel with a spicy and aromatic blend of garlic, shallots, and chilies. Perfect for those who enjoy a bold and savory dish with a kick of heat.
